This four-drink cider mule uses a measured portion of fresh ginger r syrup](/recipes/homemade-ginger-syrup/). The rest of the syrup is surplus, not extra sweetener for the pitcher. Keep the sparkling cider cold and add it at service.
Ingredients
- For syrup: 1 cup (200 g) granulated sugar
- For syrup: 1 cup water
- For syrup: 1/2 cup washed, peeled and chopped fresh ginger
- For four drinks: 1/4 cup of the cooled prepared ginger syrup
- For four drinks: 1/4 cup fresh lime juice
- For four drinks: 1 1/2 cups chilled nonalcoholic sparkling apple cider
- For four drinks: 1 cup vodka
- 1 washed lime cut into 4 wedges
- 4 cups ice, or enough for four 12- to 16-fluid-ounce glasses
Method
- Warm the sugar, water and chopped ginger in a saucepan over medium-high heat, stirring until simmering and the sugar is dissolved, about 5 to 10 minutes. Remove from heat, strain into a heat-safe container and discard ginger.
- Measure the syrup recovery and cool promptly in a shallow container in the refrigerator or an ice-water bath. Allow about 30 to 45 minutes to cool, longer if needed; use only cold syrup. Store the surplus covered at 40 F / 4 C or below and use within 7 days as a house quality limit, not a tested shelf life.
- Mix exactly 1/4 cup cold syrup with 1/4 cup lime juice and 1 cup vodka in a pitcher. Add the 1 1/2 cups cold sparkling cider last and stir gently.
- Divide evenly over ice in four glasses, add one lime wedge each and serve immediately. Use glass or mugs with an intact suitable food-safe lining; do not use unlined copper for this acidic drink.
Volume, Single Glass and Eight Drinks
The pitcher contains 3 cups / 24 fluid ounces, giving 6 fluid ounces per drink before ice. One syrup drink uses 1 tablespoon syrup, 1 tablespoon lime juice, 3 fluid ounces sparkling cider and 2 fluid ounces vodka. Assemble in that order with cider last. Allow about 1 hour from raw ginger, including cooling; assembly with prepared syrup takes 5 minutes.
Eight drinks need 1/2 cup prepared syrup, 1/2 cup lime juice, 3 cups sparkling cider, 2 cups vodka, 8 lime wedges and about 8 cups ice. One syrup batch should cover the syrup requirement, but measure recovery first; scale the drink portion too. It is not correct to leave the pitcher syrup at 1/4 cup when doubling. Larger batches need a vessel with stirring space and chilled reserves.
Ginger Beer Version
For one glass use 2 fluid ounces chilled pasteurized still apple cider , 1 1/2 fluid ounces vodka, 1 tablespoon lime juice, 1/2 cup chilled commercially packaged ginger beer and up to 1 cup crushed ice in a 16-fluid-ounce glass. Stir cider, vodka and lime, add ice, then ginger beer. Add 1 or 2 washed apple slices; keep the decorative cinnamon stick on the table. This Belly Full serving has 8 fluid ounces liquid before ice and differs from the syrup version. Four glasses use 1 cup still cider, 3/4 cup vodka, 1/4 cup lime juice and 2 cups ginger beer. Check ginger beer alcohol labeling.
House Options and Storage
For a syrup mocktail replace each 2-fluid-ounce vodka portion with 2 fluid ounces plain sparkling water; keep the 1 tablespoon syrup, 1 tablespoon lime and 3 fluid ounces sparkling cider. A ginger-beer mocktail replaces its 1 1/2 fluid ounces vodka with the same amount sparkling water. For spirit swaps use the same vodka volume of gin, rum or tequila and label alcoholic. Commercial sparkling cider can be a juice blend; choose by label, not assumptions about filtration or added sugar. Still cider is not apple cider vinegar. Fresh chopped ginger is required for this strained syrup; ground powder is not equivalent.
The original syrup source gives a two-week make-ahead note; this page uses a shorter 7-day refrigerated house quality limit at 40 F / 4 C or colder, not a tested safety guarantee. Date the clean covered container and follow earlier ingredient limits. Do not claim sugar makes it sterile. Keep the uncarbonated drink base chilled and assemble on the day. Add bubbles just before service; discard warm perishable blends after 2 hours, or 1 hour above 90 F / 32 C. Surplus syrup can be used at 1 tablespoon per 3/4 cup soda with 1 1/2 teaspoons lime, 1 teaspoon per cup tea, or 1 teaspoon over a portion of ice cream.
