Muddle and strain cucumber with mint for a clear-tasting cooler, then add lime, syrup and soda over ice. Straining yields vary with how juicy the cucumber is.
Ingredients
- 50 g cucumber, thinly sliced
- 6 to 8 fresh mint leaves
- 1/2 US fl oz (15 ml) fresh lime juice
- 1/2 US fl oz (15 ml) prepared, cooled 1:1 simple syrup
- 4 US fl oz (120 ml) chilled soda water
- Ice cubes
- 1 cucumber ribbon and 1 mint leaf, optional garnish

Method
- Rinse the cucumber and mint under running water. Put the cucumber slices and mint leaves in a shaker or small mixing bowl. Press gently with a muddler or spoon until the cucumber is juicy and the mint fragrant.
- Add the lime juice and cooled syrup; stir to combine.
- Fill a separate 12- to 16-ounce glass with ice. Pour the cucumber mixture through a cocktail strainer and fine sieve over the ice, pressing the cucumber gently to recover the juice.
- Add the chilled soda water and stir gently. Add the optional cucumber ribbon and mint leaf; serve immediately.

Glass and Yield
The measured lime, syrup and soda total 150 ml (5 US fl oz), plus the cucumber juice and ice dilution. Cucumber sizes vary, so use 50 g rather than assuming every quarter cucumber weighs the same. For a longer drink, use 180 ml (6 US fl oz) soda instead; the measured liquid becomes 210 ml (7 US fl oz), plus cucumber juice. Leave room for the muddled produce or strained juice and ice.
Syrup and Flavor Options
Reduce the prepared syrup to 1 teaspoon (5 ml) or omit it for a tarter drink. Tonic or elderflower soda can replace the 120 ml soda portion; their sweetness and bitterness differ. Use 1 thin jalapeno slice (about 1 g), gently muddled with the cucumber and strained out before serving, for a spicy version. Replace the 15 ml simple syrup with 15 ml cooled 1:1 honey syrup for a different sweetness. The measured component methods below include cooling time.
For rosemary or basil syrup, prepare the component below and substitute the same 15 ml portion. For a coconut-water version, omit the syrup and use 30 ml ready-to-drink coconut water plus 90 ml soda water. Lemon juice may replace lime at 15 ml. A cocktail option adds 30 ml commercially bottled cucumber gin to the lime and syrup before soda; label it as alcoholic. These are house variants, and none carries a digestion or low-calorie promise.
Two-Glass Batch and Frozen Cucumber
Double the base: 100 g cucumber, 12 to 16 mint leaves, 30 ml lime and 30 ml cooled syrup. Muddle and mix, then refrigerate the base covered until service, preferably the same day. Divide between two glasses and add 120 ml soda to each (240 ml total), then ice and one garnish each. For the longer option, use 360 ml soda total. Allow about 10 minutes to prepare two glasses; any chilling is additional. Keep carbonation separate until serving.
For frozen cucumber pieces, wash and cut 50 g cucumber into small chunks, freeze on a covered food-safe tray until solid (allow at least 4 hours), then use them instead of fresh cucumber. Let them soften enough to muddle, or use them as additional cold pieces after preparing the regular base. They are not a promise of no dilution. Freezing time is additional to the drink clock.
Storage
Refrigerate cut cucumber, mint and any prepared base at 40 F (4 C) or below. Keep produce in clean covered containers and make the base the same day for best flavor. Refrigerate perishables within 2 hours, or 1 hour above 90 F (32 C). This same-day target is a house quality choice, not a tested shelf life. Serve the carbonated drink immediately.
Syrup Components
The drink clock assumes cooled syrup is ready. For a small plain batch, dissolve 1/4 US cup granulated sugar in 1/4 US cup (60 ml) water over gentle heat, stirring. Cool in a clean heat-safe container over an ice-water bath; allow about 25 minutes total or longer until cold. Measure what you recover and use only the specified drink portion. For honey syrup, stir 1 tablespoon honey with 1 tablespoon warm water until smooth, then cool; allow about 15 minutes total. Do not use honey for infants under 12 months.
For a herb syrup variation, add either 1 small culinary rosemary sprig (about 5 cm) or 4 basil leaves to the warm sugar syrup, steep off heat for 10 minutes, strain, then cool. Allow about 35 minutes total or longer until cold. This infusion is a house adaptation. Refrigerate these small batches at 40 F (4 C) or below and use within 3 days as a conservative house quality target, not a tested shelf life. Commercial syrups follow their labels.
