This tart, built-in-glass drink retains the original passion fruit, lime and syrup balance. Foodal informs the pulp/citrus/mint/fizz method; this simpler recipe is a house variant, not Foodal’s multi-citrus shaken formula. No blood-pressure, insulin or hydration-treatment claim is made.
Prep: 5 minutes. Total: about 5 minutes, longer if chilling is needed. Yield: 1 serving (210 ml before ice).

Ingredients
- 3 tablespoons (45 ml) unsweetened passion fruit puree, thawed in the refrigerator if frozen
- 1 US fl oz (30 ml) lime juice
- 1 tablespoon (15 ml) prepared cooled plain simple syrup
- 4 US fl oz (120 ml) chilled sparkling water
- Ice for serving
- 1 washed fresh mint leaf and 1/2 washed fresh passion fruit, optional garnish

Method
- Stir measured passion fruit puree, lime juice and cooled syrup together in a 16-ounce glass.
- Add serving ice, leaving room for the mixer; pour in the sparkling water and stir gently.
- Add the optional mint leaf. Place the optional passion fruit half securely on top of the ice, cut side up, or serve it on a side plate if it will not sit safely. Serve immediately.

Puree, Fruit and Mixer Measures
The base has 210 ml (7 US fl oz) liquid before ice. For a longer drink use 180 ml sparkling water instead of 120 ml, making 270 ml (9 US fl oz). Fresh passion fruit can replace thawed puree: scoop and measure exactly 45 ml pulp, with seeds if desired, rather than assuming two fruits always supply that amount. If straining seeds, measure after straining. Check puree labels for sweetness and ready-to-eat directions; thaw in the refrigerator, not all day on the counter.
For sweetened puree omit the 15 ml syrup initially, keeping the other measures unchanged; taste, then add up to 15 ml prepared syrup if needed. For bottled passion fruit juice use 60 ml juice instead of 45 ml puree and omit syrup initially; keep 30 ml lime and 120 ml sparkling water. Taste the mixed glass and add up to 15 ml prepared syrup if needed. Juice, concentrate and puree are different products; do not use undiluted concentrate as bottled juice.
Complete Flavor Options
For mint passion fruit, gently muddle 6-8 washed mint leaves with 1 tablespoon granulated brown sugar and the 30 ml lime juice until the sugar is dissolved. Omit the 15 ml simple syrup, add the 45 ml passion puree, then ice and 120 ml soda. This sweetener replacement is not an extra sugar addition; allow about 7 minutes.
For mango passion fruit add 60 ml ready-to-eat unsweetened mango puree to the 45 ml passion puree, 30 ml lime and 15 ml syrup, then ice and 120 ml soda. This makes 270 ml before ice; use a 20-ounce glass or reduce ice. No lasting gradient is promised. For ginger fizz replace the 120 ml sparkling water with 120 ml chilled commercial non-alcoholic ginger beer, and omit syrup initially; add up to 15 ml only if needed. Check the ginger-beer label; this is not a home-fermentation method.
For a still coconut version replace 120 ml sparkling water with 120 ml ready-to-drink coconut water. Keep puree, lime and syrup unchanged. Coconut water is a clear still mixer, not creamy coconut milk. Each of these is one glass, not a medical drink.
Four-Drink and Party Service
For four base drinks combine 180 ml passion puree, 120 ml lime juice and 60 ml cooled syrup, making 360 ml base. Refrigerate, divide into four 90 ml portions over ice and add 120 ml sparkling water per glass. The longer version needs 180 ml per glass. Allow about 10 minutes assembly with the base ready; puree thawing and syrup cooling are additional. Do not promise a fixed rate of twenty glasses in ten minutes. Use the base within 24 hours for flavor and add fizz only at service.
Plain and Honey Syrup Components
For a small plain batch, dissolve 1/4 US cup granulated sugar in 1/4 US cup (60 ml) water over gentle heat, stirring. Remove from heat and cool in a clean heat-safe container over an ice-water bath. Allow about 25 minutes including cooling, or longer until cold. Measure recovery; only the stated portion goes in the drink. This is a 1:1 ratio by volume, not by weight.
For honey syrup, stir 1 tablespoon honey into 1 tablespoon warm water until smooth, then cool. Allow about 15 minutes, or longer until cold. Use the same measured drink portion if substituting, and expect a different sweetness. Refrigerate the surplus as described below.
Preparation and Storage
Wash fresh produce under running water before cutting, and scrub firm fruit or cucumber. Use culinary botanicals sold for food or tea, not ornamental flowers. Keep ready-to-drink juices, opened milk and commercial mixers as their labels direct.
Refrigerate prepared bases promptly at 40 F (4 C) or below in clean covered containers. Cool hot infusions in shallow heat-safe containers or an ice-water bath; do not wait indefinitely for them to reach room temperature. Refrigerate within 2 hours, or within 1 hour above 90 F (32 C). Keep party pitchers refrigerated or on ice at refrigerator temperature. Add bubbles and serving ice at the last moment.
Use fresh-fruit/herb bases the same day, or within 24 hours, for flavor. Use strained tea or homemade syrup within 3 days. These are conservative house quality targets, not tested shelf lives. Finished fizzy drinks are best served immediately. Follow any shorter ingredient-label limit. Honey is unsuitable for infants under 12 months.
