Peach puree gives this mule its fruit body. Lime brings the sharp edge, and ginger beer supplies the bubbles and spice. For one glass, measure 2 ounces of puree, 1/3 ounce of lime juice, and 4 ounces of alcohol-free ginger beer. This peach version combines ginger beer and lime with peach puree. Peach puree and its preparation are included in the method.

Before you open the ginger beer

Choose a bottle labeled alcohol-free if you need an alcohol-free drink. Ginger beer is a style name, not proof of its alcohol content, fermentation method, or sugar level. Check the individual label. The Fever-Tree product information describes its ginger flavor and ingredients, but it does not establish the properties of every brand.

Ginger ale can be a softer-flavored substitute. Taste the mixer before adding extra sweetener. Choose it for its peach and ginger flavor.

What You Will Need

Peach puree batch

  • 2 ripe peaches, pitted and quartered
  • 1 tablespoon simple syrup
  • Juice of 1/2 lime

Each drink

  • 2 oz (60 ml) prepared peach puree
  • 1/3 oz (10 ml) fresh lime juice
  • 4 oz (120 ml) chilled ginger beer labeled alcohol-free
  • Ice
  • Optional lime wedge and peach slice

Use a blender, measuring cup or jigger, and a tall glass. A sieve is optional. Choose a glass with room for the liquid and ice; a 12 to 16 ounce tumbler is easier to fill than a small cocktail glass.

How to Make It

  1. Blend the peaches, simple syrup, and half-lime juice until smooth. Strain if you prefer less pulp.
  2. Measure the finished puree. The batch makes more than the 2 ounces used in one drink, but peach size and straining change the total. Divide your measured puree volume by 2 ounces to find the number of drinks it can supply.
  3. Fill a tall glass with ice. Stir in 2 ounces puree and 1/3 ounce fresh lime juice.
  4. Add 4 ounces cold ginger beer. Stir gently from the bottom so the puree mixes through without beating out the bubbles.
  5. Add the optional lime and peach garnish. Serve immediately.

Lime juice1/3 oz1 1/3 oz
Ginger beer4 oz16 oz

The table uses finished puree, not a guessed peach count. Make enough puree to reach the measured quantity. Keep the base chilled while you set out the glasses, then add ice and ginger beer to each glass at serving time. These quantities cover one round of four drinks.

Adjust the texture before the bubbles

Too pulpy? Strain the puree before measuring your portion. You’ll lose some yield, so measure it again afterward.

Too sweet? Taste the peach base and ginger beer separately. A sweeter mixer may need no additional syrup in the finished glass. Add any extra lime a little at a time.

No blender? Mash a soft ripe peach thoroughly with a fork, then press through a sieve. The texture will be different from blended puree.
