This lime-and-mint tepache drink uses a commercially packaged ready-to-drink tepache and is mixed in an open glass. Homemade tepache is outside this serving recipe; its inherited process remains unresolved here.

The former TFA home-batch directions are documented in the separate Tepache fermentation process review ; they remain on hold and are not instructions for this commercial-base drink.

Ingredients

  • 4 US fluid ounces chilled commercially packaged ready-to-drink tepache (follow label alcohol and storage information)
  • 1 US fluid ounce fresh lime juice
  • 2 US fluid ounces chilled plain sparkling water
  • 4 washed mint leaves
  • 1/2 teaspoon honey syrup, optional (mix 1 teaspoon honey with 1 teaspoon warm water; measure 1/2 teaspoon)
  • 1/2 cup ice
  • 1 small pineapple wedge and 1 lime wheel, optional

Method

  1. Wash fresh produce and herbs under running water. If using honey syrup, stir the honey and water until dissolved, then let this small portion cool; reserve any surplus chilled.
  2. Place the mint in a 12- to 16-fluid-ounce glass and press gently with a spoon. Add lime juice and the optional 1/2 teaspoon honey syrup.
  3. Add ice, pour in cold ready-to-drink tepache, then add sparkling water. Stir gently, add the optional fruit and serve immediately. Do not ferment or reseal this blend.

Ratio, Alcohol and Alternatives

The 4:1:2 tepache /lime/water ratio makes 7 fluid ounces before ice, optional syrup and garnish. Fermented tepache is not guaranteed alcohol-free. Check the label; for a drink without a fermented base replace the 4 fluid ounces tepache with 4 fluid ounces pasteurized pineapple juice. Do not infer alcohol from sweetness, fizz or sourness.

For an already fizzy tepache you may omit the 2 fluid ounces water: this gives a 5-fluid-ounce drink, not the same dilution. For a cinnamon-heavy product use 2 mint leaves; for a clove-heavy product add 1 extra fluid ounce sparkling water. Ginger -flavored commercial tepache uses the main ratio. These are house taste choices, not safety corrections.

Four Drinks and Optional Spirits

Use 2 cups tepache, 1/2 cup lime juice, 16 mint leaves and 1 cup sparkling water for four 7-fluid-ounce drinks. For optional syrup, dissolve 2 teaspoons honey in 2 teaspoons warm water, cool, then measure 2 teaspoons of the finished syrup for the pitcher. Reserve any surplus chilled. Mix mint, lime and tepache in a pitcher of at least 1 quart; keep chilled and add sparkling water at service. Divide over 2 cups ice in four glasses. Use four of each optional garnish. For an adult cocktail add 1 fluid ounce tequila or rum per glass; liquid becomes 8 fluid ounces before syrup.

Storage and Fermentation Boundary

Serve freshly mixed. Follow the tepache label for unopened and opened storage and keep the prepared base at 40 F / 4 C or below; make it on the day. Discard mixed drinks left warm for more than 2 hours, or 1 hour above 90 F / 32 C. General fermentation pH guidance is not a validation of a particular homemade tepache. Harsh odors, visible growth or unusual pressure are reasons to discard, not to taste or experiment with a batch.

Sources and Review Limits

  • USU home fermentation guidance : Time/temperature/pH process controls needed; general acid threshold cannot validate this fruit fermentation or pressure/ABV.
  • FDA buffet guidance : Produce washing, thermometer-based cold/hot holding, small fresh service portions, 2-hour/1-hour disposal and shallow cooling; general guidance, not shelf-life validation.

These are source and measurement checks, not kitchen testing. House variations and short quality windows below have not been shelf-life tested.
