Pumpkin spice creamer makes a quick fall version of the vodka-and-coffee drink. The measured recipe makes two cocktails; ambiguous shot labels are unnecessary. Coffee liqueur contains caffeine, and this cocktail contains alcohol.

Pumpkin Spice White Russian

  • 3 fluid ounces vodka
  • 3 fluid ounces refrigerated pumpkin spice creamer
  • 1 1/2 fluid ounces coffee liqueur
  • 3 tablespoons crushed graham crackers for the two rims
  • 1 teaspoon pumpkin pie spice for the rims
  • 1 teaspoon granulated sugar for the rims
  • 2 teaspoons potable water to wet rims
  • ice
  • 2 tablespoons refrigerated whipped cream, optional garnish
  • 1/8 teaspoon pumpkin pie spice, optional garnish for both drinks
  1. Mix graham crumbs, 1 teaspoon spice and sugar on a plate. Moisten the outside rims of two 10-ounce rocks glasses with the 2 teaspoons water, press into crumbs and discard leftover used rim mixture.
  2. Fill a shaker halfway with ice. Add vodka, creamer and coffee liqueur; shake for about 10 seconds until chilled. Do not shake carbonated ingredients.
  3. Strain equally over fresh ice in the two prepared glasses. Each receives half the whole mixture. Optionally add 1 tablespoon whipped cream and half the 1/8 teaspoon garnish spice to each. Serve immediately.

Yield: 2 cocktails; 3.75 fluid ounces each before ice dilution and garnish. Time: 5 minutes.

Creamer, milk and syrup variations

For one glass, use 1 1/2 fluid ounces vodka, 3/4 fluid ounce coffee liqueur and 1 1/2 fluid ounces creamer. To build instead of shake, stir those liquids over ice for about 20 seconds and serve. Rim with half the batch rim mixture if desired.

For the two-drink milk/puree variation replace all 3 fluid ounces creamer with 3 fluid ounces refrigerated dairy, almond, oat or coconut beverage, 1 tablespoon plain canned cooked pumpkin puree and 1 tablespoon maple syrup. Blend these cold ingredients for 20 to 30 seconds before adding the spirits and shaking. Divide equally; puree and syrup increase volume. A dairy-free claim also requires checking whipped cream and all other labels for dairy. This is a milk/puree option, not a homemade shelf-stable creamer.

For a syrup version of two drinks, replace the 3 ounces creamer with 1 fluid ounce purchased pumpkin spice food syrup and 2 fluid ounces refrigerated milk or cream. Follow that syrup label rather than an invented two-week homemade storage claim.

Four or eight drinks

For four cocktails use 6 fluid ounces vodka, 6 fluid ounces creamer and 3 fluid ounces coffee liqueur. For eight use 12, 12 and 6 fluid ounces respectively. Mix without ice, cover and refrigerate for up to 2 hours. Divide the entire batch equally into 4 or 8 glasses over ice and stir. These quantities preserve the two-drink recipe; stirring in the glass supplies dilution. Do not shake a pitcher.

Lower caffeine and lighter pours

To reduce caffeine in two cocktails, replace the coffee liqueur with 1 fluid ounce chilled brewed decaf coffee plus 1/2 fluid ounce purchased simple syrup. Use with the same vodka/creamer, shake and divide. Decaf may contain caffeine; cold brew and instant espresso are not caffeine-free replacements. The vodka still makes this alcoholic.

For a lighter spirit pour per glass, use 1 fluid ounce vodka, 1/2 fluid ounce coffee liqueur and 2 1/4 fluid ounces creamer. It still contains alcohol. Its strength depends on labeled spirit ABV and dilution, so no fixed standard-drink count is claimed.

Handling and flavor

Skip the rim if you prefer a smoother drink. Vanilla vodka can replace plain vodka at the same volume, with a different sweetness. Shaking blends the mixture; a build may separate and can be stirred again. Serve with cookies or pie if desired.

Refrigerate fresh bases and cut fruit promptly at 40 F (4 C) or below and use within 24 hours, a conservative house limit rather than a tested shelf life. Cool hot bases in shallow heat-safe containers or an ice-water bath, then refrigerate; do not wait for a large pitcher to reach room temperature on the counter. Keep cold servings on ice. Discard perishables after 2 hours without temperature control, or 1 hour above 90 F (32 C). Keep purchased milk, juice and syrup according to their labels, using the shorter limit. Wash produce under running water before cutting; discard rotten fruit.
