Two large coconut-milk lattes follow the ingredient structure in Downshiftology. Caramel must already be cold for the ten-minute assembly; the optional homemade sauce takes much longer.

Prep: 10 minutes with components ready. Total: About 10 minutes with components ready; see component times. Yield: 2 large lattes (330 ml milk/sauce per glass, plus dissolved sugar, blender-ice melt and serving ice).

Ingredients

  • 1 tablespoon unsweetened matcha powder
  • 1 teaspoon ground vanilla bean
  • 2 tablespoons (about 18 g) coconut sugar
  • 600 ml stirred coconut milk, divided: 360 ml blend and 240 ml base
  • 1/2 US cup ice for the blender
  • 4 tablespoons (60 ml) cooled salted caramel sauce, component below or commercial
  • 1 US cup serving ice, divided; reduce for headroom

Method

  1. Blend matcha, ground vanilla, sugar, 360 ml coconut milk and the 1/2 cup blender ice until smooth, about 30-60 seconds.
  2. In each of two glasses holding at least 710 ml, add 30 ml cold caramel sauce, half the serving ice and 120 ml remaining milk.
  3. Measure and divide the entire matcha blend equally between the two glasses, pouring slowly over a spoon if desired. Layers may mix; stir before drinking.

Coconut Caramel Component

For about 240 ml sauce, combine one 13.5 fl oz (about 400 ml) can full-fat coconut milk, 1/2 US cup (about 95 g) coconut sugar and 1/2 teaspoon fine sea salt in a deep saucepan. Bring just to a boil, watching for overflow, then reduce immediately to a gentle simmer. Cook 30-40 minutes, stirring more frequently near the end, until it coats a spoon; the endpoint governs the clock. Remove from heat and stir in 1 teaspoon coconut oil and 1 teaspoon vanilla extract or labeled alcohol-free vanilla flavoring. Cool promptly in a shallow heat-safe container and refrigerate until cold. Measure recovery rather than adding water to force a sauce yield. Allow about 75 minutes including cooling, longer until cold. Use only 60 ml for two drinks. The sauce adapts Downshiftology and replaces the unrelated dry-sugar smoking method. Hot sugar sauce can burn; do not taste it directly from the pan. Store within the 3-day house component target below.

Eight-Drink Batch

Blend 4 tablespoons matcha, 4 teaspoons ground vanilla, 1/2 US cup (about 72 g) coconut sugar, 1,440 ml coconut milk and 2 US cups ice. Divide this complete matcha blend into eight equal portions. Each glass also receives 30 ml cold caramel sauce, 120 ml coconut milk and about 1/2 US cup serving ice. Total coconut milk is 2,400 ml (10 US cups), not absent from the blender batch. Use eight glasses holding at least 710 ml each and reduce serving ice if needed for headroom. Allow about 15 minutes assembly with sauce cold.

Complete Options

Milk choice: replace all 600 ml coconut milk with 600 ml whole dairy milk, oat drink or almond drink; divide 360 ml for blending and 240 ml for the base layer. Choose a caramel compatible with the dietary requirement. Canned coconut milk is a rich option; carton drink makes a lighter latte. Layers are temporary and not guaranteed by milk type. Contains caffeine, varying with powder and mass; no milligram estimate is assigned.

No blender: omit the 1/2 cup blender ice. Sift 1 tablespoon matcha and whisk with 60 ml water at 170 F (77 C); dissolve the 18 g sugar into it and add vanilla. Cool promptly, then stir in 300 ml milk, replacing the original 360 ml blend milk plus melted ice with this 360 ml water/milk blend. Split between two glasses, each with 120 ml base milk, 30 ml caramel and serving ice. This lighter, still house variant does not recreate the frozen blender texture. Allow about 45 minutes from heating through cooling.

Milder matcha: replace the base 1 tablespoon with 2 teaspoons, other measures unchanged. Sweeter: add 1 teaspoon (4 g) sugar to the two-drink blend, rather than unbounded spoonfuls. Caramel syrup: replace the 60 ml sauce with 60 ml commercial caramel syrup; use label ingredients and expect an evenly mixed sweeter drink rather than doubling the syrup.

Hot version for two: omit both ice measures. Whisk 1 tablespoon matcha with 60 ml water at 170 F (77 C); dissolve 18 g sugar and add the teaspoon ground vanilla. Warm 540 ml milk to about 140 F (60 C), then combine with matcha and 60 ml sauce and divide between two 480 ml heat-safe mugs, about 330 ml each. Never seal or shake hot liquid. Allow about 15 minutes with sauce ready.

Make Ahead

Blend close to service. A same-day blend may be refrigerated for up to 4 hours for quality and stirred before dividing; separation is expected. Sauce has its own storage limit above. A five-minute layer lifetime is not guaranteed.

Cold Storage and Service

Wash fresh produce under running water before cutting, including melon rind; scrub firm produce with a clean brush. Use pasteurized ready-to-drink juices and cider. Keep prepared drinks and cut fruit covered at 40 F (4 C) or below. Cool heated components promptly in shallow heat-safe containers, using an ice-water bath before refrigeration when useful. Do not seal or shake hot liquid.

Use fruit, dairy and assembled drink bases within 24 hours for quality; strained plain tea and homemade syrups within 3 days, unless an ingredient label requires sooner. These are conservative house quality targets, not tested shelf lives. Add carbonation, ice and garnish at service. Keep a small serving jug chilled over ice and refill from the refrigerator. Discard perishables after a cumulative 2 hours without refrigeration, or 1 hour above 90 F (32 C); adding fresh fruit does not reset that clock. Follow commercial ingredient labels for unopened/opened storage. Honey-containing drinks are for people at least one year old.
