Pear juice and split vanilla pods steep in the refrigerator before the sparkling water goes in. This four-glass batch uses the listed proportions; the single-glass and spice options are measured variations.
Ingredients
- 3 cups chilled pasteurized pear juice blend or pear nectar
- 2 vanilla bean pods, split lengthwise and cut in half
- 1 tablespoon maple syrup
- 1 cup chilled plain sparkling water or club soda
- 1 lemon or lime wedge, for moistening rims
- 2 tablespoons cinnamon sugar (mix 2 tablespoons granulated sugar with 1/4 teaspoon ground cinnamon; measure 2 tablespoons)
- 2 cups ice, divided
- 4 thin washed pear slices, optional garnish
Method
- Stir pear juice, maple syrup and split vanilla pods in a pitcher of at least 1 1/2 quarts. Refrigerate at 40 F / 4 C or colder for at least 30 minutes and up to 4 hours.
- Prepare the cinnamon sugar, moisten the rims of four 14- to 16-fluid-ounce glasses with citrus and dip in the measured sugar. Discard the rim mixture after use. Add 1/2 cup ice to each glass.
- Remove the vanilla pods. Add 1 cup cold sparkling water to the pitcher and stir gently. Divide evenly into four glasses, add optional pear slices and serve immediately. Keep woody herbs and pods beside the glasses rather than on rims.
Clock, Yield and One Glass
Allow 10 minutes active work plus at least 30 minutes infusion: 40 minutes total. The batch has 4 cups plus 1 tablespoon liquid, so each portion is about 8 1/8 fluid ounces before ice. For one glass use 3/4 cup pear juice, 1/2 split vanilla pod, 3/4 teaspoon maple syrup and 1/4 cup sparkling water . Steep the juice, pod and syrup cold for the same 30 minutes, remove the pod, then add soda over 1/2 cup ice. Use 1 1/2 teaspoons cinnamon sugar for the optional rim. This is an exact quarter batch; the single-glass version uses a different juice amount.
Fresh Pear Base
Wash, peel and core 3 ripe pears (about 500 g prepared), chop and simmer with 1 cup water in a covered pan for about 12 to 20 minutes until soft. Mash and strain, pressing the solids. Recovery depends on fruit and straining; it is not guaranteed to be 1 1/2 cups. Measure the liquid and scale the drink from 3/4 cup pear base per glass, or make a double fruit batch and measure 3 cups for the pitcher. Cool promptly in a shallow heat-safe container and refrigerate; use within 3 days as a conservative house quality limit, not a validated shelf life. Allow extra cooking and chilling time. Commercial juice follows its label after opening; smell alone cannot prove safety.
Herb and Spice Options
- Rosemary: add one washed 3-inch sprig to the four-drink base for 30 minutes cold, then remove it along with the vanilla.
- Ginger: add 1 tablespoon peeled grated fresh ginger to the four-drink base for 30 minutes cold; strain before soda. Measure the recovered base and divide equally.
- Cinnamon syrup: simmer 1/4 cup water, 1/4 cup maple syrup and one 3-inch cinnamon stick gently for 5 minutes. Remove the stick, measure recovery (up to about 1/2 cup before evaporation), cool promptly and refrigerate. Use 1 tablespoon in place of the batch’s maple syrup or 3/4 teaspoon per single glass. Use surplus within 3 days as a house quality limit.
- Sweeter or sharper juice: use 1 1/2 teaspoons maple syrup for the batch and 1 tablespoon lemon juice; taste before adding soda. Maple, agave or honey can each supply the main 1 tablespoon sweetener; honey needs thorough stirring to dissolve. They give different flavors.
- Vanilla extract or paste: replace both pods with 1 teaspoon extract or paste, following product strength directions if different. Mix into cold juice and skip the 30-minute infusion; assembly takes 10 minutes. Choose an alcohol-free flavoring if avoiding alcohol.
- Garnish: use one pear or orange slice per glass, or one washed mint leaf. Rosemary is part of the rosemary infusion, with the woody sprig removed before serving. Cinnamon sticks stay on the table.
Adult Cocktail and Storage
For each adult glass use 1 1/2 fluid ounces vodka or gin, 1/2 cup steeped pear base and 1/4 cup soda: 7 1/2 fluid ounces before ice. Alternatively replace the batch’s 1 cup soda with 1 cup Prosecco; label the pitcher alcoholic. Keep the uncarbonated commercial-juice base refrigerated and use on the day; the 4-hour infusion is a flavor window, not a microbial shelf-life ceiling. Keep fresh juice and cut garnishes cold, follow package limits, and discard warm perishables after 2 hours or 1 hour above 90 F / 32 C.
Food Safety and Recipe Notes
- Recovered four-serving formula and 30-minute to four-hour cold infusion; single-glass note differs from quarter batch.
- FDA buffet guidance : Produce washing, thermometer-based cold/hot holding, small fresh service portions, 2-hour/1-hour disposal and shallow cooling; general guidance, not shelf-life validation.
These measurements are not kitchen-tested. House variations and short quality windows below have not been shelf-life tested.
