Five fruit-and-herb combinations remain as cold, immediate-serving kombucha drinks. The former sealed second-fermentation directions are on hold: culture, acidity over time, temperature, bottle pressure and finished alcohol were not controlled by the inherited method.
Why Second Fermentation Is on Hold
The cited study examined particular cultures and sugar levels over time. It does not validate these five fruit additions in sealed home bottles. A sour taste or one pH result cannot establish pressure control or finished alcohol. This page provides no bottling, room-temperature incubation, pressure-release schedule or consumption instructions for a homemade ferment.
Cold Base and Serving Method
For each flavor below use 1 cup chilled, commercially packaged ready-to-drink plain kombucha , following its label, or 1 cup plain sparkling water. Wash fresh produce and herbs under running water. Use a 16-fluid-ounce serving glass with 1/2 cup ice. Lightly muddle solid fruit and herbs in the glass, add the measured juice and cold base, then stir gently and serve immediately. These are house flavor blends, with no fermentation or resealed storage. Commercial kombucha may contain alcohol and caffeine; choose sparkling water when avoiding either.
1. Peach Basil
Use 1/4 cup diced ripe peach and 4 basil leaves with the cold base. Yield: one glass, about 1 cup liquid plus fruit and ice; 5 minutes.
2. Blueberry Lime
Use 1/4 cup blueberries and 1 tablespoon lime juice with the cold base. Lightly crush the berries. Yield: one glass, 8.5 fluid ounces liquid plus berries and ice; 5 minutes.
3. Watermelon Mint
Use 1/4 cup strained watermelon juice and 6 mint leaves with the cold base. To make juice, blend 1/2 cup diced seedless watermelon and strain; measure 1/4 cup, reserving extra chilled. Yield: one glass, 10 fluid ounces liquid plus ice; 10 minutes including juice preparation.
4. Pineapple Ginger
Use 1/4 cup pasteurized pineapple juice and 2 thin slices washed fresh ginger with the cold base. Press the ginger lightly in the glass; remove slices before sipping if desired. Yield: one glass, 10 fluid ounces liquid plus ice; 5 minutes.
5. Cucumber Lemon
Use 3 thin cucumber slices and 1 tablespoon lemon juice with the cold base. Yield: one glass, 8.5 fluid ounces liquid plus cucumber and ice; 5 minutes.
Frozen Fruit, Purees and Scaling
Use the same 1/4-cup peach or blueberry portion from frozen fruit after thawing in the refrigerator; include released juice. Use washed fresh fruit or a product labeled ready to eat, following package heating directions when present. Puree can replace diced fruit at 2 tablespoons per glass; it changes texture and is added only in an open serving glass. Multiply the complete selected blend by guest count and add the cold base at service. Preparing all five needs 5 cups base and all five listed additions; it does not yield five full 16-ounce bottles.
Storage and Troubleshooting
Keep ingredients at 40 F / 4 C or colder. Follow commercial package storage instructions; prepare fresh blends for immediate service. For a milder flavor use half the listed herb or ginger amount. Do not taste a suspect, moldy or damaged commercial product to judge safety. Discard it. The earlier advice to ferment longer, check carbonation or rescue gushing bottles is withdrawn.

- IAFP 2025 kombucha study : Abstract accessed: culture/sugar/time-dependent microbial reductions; not validation of five sealed fruit second ferments.
- USU home fermentation guidance : Time/temperature/pH process controls needed; general acid threshold cannot validate this fruit fermentation or pressure/ABV.
- TTB kombucha guidance : Alcohol can rise after bottling; commercial label not proof of zero alcohol.
- FDA buffet guidance : Produce washing, thermometer-based cold/hot holding, small fresh service portions, 2-hour/1-hour disposal and shallow cooling; general guidance, not shelf-life validation.
