Two cold bases and a few labeled mixers make a practical summer mocktail bar . For measured holiday drinks to pour from the station, including zero-proof choices, see Fourth of July mocktails and cocktails . The former party-station Recipe fields, calorie number and 8-12-serving claim did not describe a measured drink and are removed. This guide keeps separate preparations with explicit pours.
Prepare Two Bases
Wash hands and equipment. Rinse produce and culinary herbs under running water before cutting; scrub melons and cucumbers before peeling. Use only correctly identified ingredients grown for food, never florist flowers or plants treated with pesticides unsuitable for food crops.
For lemonade, combine 1 cup measured lemon juice, 3/4 cup prepared chilled 1:1 simple syrup and 6 1/4 cups chilled potable water, 2 quarts total. Stir and refrigerate in a vessel larger than 2 quarts. Allow 10 minutes with syrup ready; syrup prep adds time.
For black tea, prepare and measure 2 quarts chilled tea according to the bag label, with one bag per cup unless the label specifies otherwise. Brew at label temperature/time, remove bags and cool promptly in small heat-safe containers in an ice bath, then refrigerate. Plan about 30-45 minutes including cooling. Tea contains caffeine. For green tea use its own package temperature/time, not the black-tea clock. For hibiscus tea use labeled food-tea bags, rolling-boil water and at least five minutes or longer label time; cool promptly and measure 2 quarts. Botanical suitability remains individual.
For cucumber mint water, scrub one cucumber, slice and measure 2 cups slices. Put in 2 quarts chilled potable water with 16 rinsed fresh culinary mint leaves, cover and refrigerate 30 minutes. Strain and top up to 2 quarts with chilled potable water; allow about 40 minutes including prep. No dried herbal cold-soak substitution is implied.

Other Measured Bases
Pineapple lime water: stir 2 cups labeled pasteurized pineapple juice, 1/2 cup measured lime juice and 5 1/2 cups cold potable water, 2 quarts. Allow 10 minutes; no fermentation step.
Watermelon lime agua fresca: scrub melon rind before cutting, blend flesh and strain; measure 4 cups juice. Stir with 1/2 cup lime juice and 3 1/2 cups cold potable water, 2 quarts. Prepare more fruit if needed for the measured juice. Allow about 15 minutes; starting cubes do not promise strained output.
Peach iced tea: mash 1 cup rinsed pitted ripe peach slices with 1/4 cup prepared honey syrup. Mix with 7 cups chilled prepared black tea, cover and refrigerate five minutes; strain and add more prepared tea to reach 2 quarts. Allow 15 minutes with tea/syrup ready; brewing and cooling add time. This is a house fruit infusion, not a homemade peach-syrup preservation recipe.
Green tea with honey: stir 1/4 cup prepared 1:1 honey syrup into 7 3/4 cups measured prepared chilled green tea, 2 quarts. Allow five minutes with components ready; label it caffeinated.
Coconut lime: stir 7 1/2 cups labeled coconut water with 1/2 cup lime juice, 2 quarts. Allow five minutes and refrigerate; check ingredient/allergen label.
Five Glass Combinations
Use 12-fluid-ounce or larger glasses, add about 1/2 cup serving ice, then 4 fluid ounces selected base and 2 fluid ounces mixer. Stir gently, never shake carbonated mixers in a sealed shaker. Each is 6 fluid ounces liquid before ice. Commercial mixers must be labeled alcohol-free when that is required; check ginger beer, tonic, bitters and zero-proof products individually. Open bottles as needed and follow labels.
- Watermelon basil fizz: 4 fluid ounces watermelon lime base, 2 fluid ounces plain sparkling water, one rinsed basil leaf and one lime wheel.
- Peach ginger tea spritz: 4 fluid ounces peach iced tea, 2 fluid ounces labeled alcohol-free ginger beer, one rinsed lemon wedge and one mint leaf. Contains caffeine.
- Hibiscus citrus cooler: 4 fluid ounces prepared chilled hibiscus tea, 2 fluid ounces grapefruit seltzer, one rinsed orange slice and two raspberries.
- Cucumber mint sparkler: 4 fluid ounces cucumber mint water, 2 fluid ounces sparkling water or labeled tonic, one cucumber ribbon and one lime wedge. Tonic changes sweetness and quinine content.
- Pineapple lime splash: 4 fluid ounces pineapple lime base, 2 fluid ounces coconut sparkling water, one mint leaf and one small pineapple wedge.

Syrups and Add-ins
For simple syrup dissolve 1/2 cup sugar in 1/2 cup potable water over heat, cool promptly and refrigerate. For honey syrup dissolve 1/4 cup honey in 1/4 cup warm water, cool and refrigerate. Ratios are by volume; measure actual yield. Allow 20-30 minutes simple syrup or 15-20 minutes honey syrup preparation. Keep them in clean labeled containers; use same day or freeze extra. A guest may add 1 teaspoon syrup per glass; it adds sweetness and 1/6 fluid ounce liquid, so do not promise a fixed calorie count.
Use commercial labeled ginger juice or syrups if offered, following labels; no unknown fresh ginger juice shelf-life or homemade agave syrup process is implied. Bitters often contain alcohol and are not a default ingredient for a no-alcohol bar. Leave rosemary and thyme beside glasses rather than loose woody sprigs in drinks. Fresh herbs must be identified culinary ingredients, not essential-oil substitutes.
Capacity and Make-Ahead Plan
Two 2-quart bases total 128 fluid ounces. At 4 fluid ounces base per glass this supplies 32 drinks, which require 64 fluid ounces mixer. For 20-30 drinks reserve 80-120 fluid ounces base and 40-60 fluid ounces mixer; bottle counts are meaningless without package volume. This is serving arithmetic, not a guarantee of guests’ consumption or total ice required. Prepare clean serving ice and separate cold-holding ice; refill small covered ice containers from a cooler with a scoop.
Plan about 25 minutes to arrange the station with prepared cold components; cooking, brewing, extraction and cooling are separate. Wash, slice and prepare perishables for same-day service, refrigerate and replenish small bowls from a cold backup. Do not leave herbs in warm water on the table as a food-holding plan. Keep cut fruit, berries, herb garnishes and bases at 40 F (4 C) or below. Refrigerate promptly in small clean containers at 40 F (4 C) or below. Discard after more than two cumulative hours without cold holding, or one hour above 90 F (32 C). Do not wait for a large batch to cool on the counter. Normal smell and appearance do not establish safety.
Freeze extra base before its holding limit is exceeded; finished drinks are assembled at service. This conservative same-day/freezer plan does not validate a shelf life or botanical suitability. All combinations are coherent house culinary adaptations informed by original fruit-drink and syrup sources; no identical external recipe, medical effect or physical testing is claimed.
